These unusual cakes, pastries and confections
are made authentically with recipes
and processes direct from Old World
Europe. And since our dedication to
quality is part of this tradition, you'll
always find them delicious as well as
beautiful.
Pictured
to the right is Baumkuchen, a trademark
delicacy of German Konditoreis (a.k.a.
pastry shops) for centuries. Baumkuchen
means literally "Tree Cake,"
and the name fits for more reasons than
one. These moist almond sponge cakes
take hours to create because the process
involves baking on many successive thin
layers of batter. The result -- when
thecake is sliced open many concentric,
golden brown rings are revealed, much
like the inside of a tree.
Lutz
also makes Baumkuchen Spitzen, which
is Baumkuchen covered in a delicious
layer of chocolate.
Koenig's Kuchen,
also known as English Tea
Cake, is a rolled cake. Sponge cake
with cherries and white raisins
is covered in raspberry preserves
and then wrapped in sponge cake
with almonds.
Lutz offers many traditional specialties
for the holidays. Most in demand for
Christmas is the Christ Stollen, a custom
in Germany for centuries. The
Lutz stollen recipe has been in the
family since 1790 and
was introduced to Chicago by Mr. and
Mrs. Fred Lutz
in 1948. In
their process, a selection of raisins,
citron, and orange peel are combined
with toasted
almonds and almond paste, then soaked
in rum. This mixture is formed
into
the traditional loaf shape and baked
to a golden brown. As
a festive finishing touch,
the stollen is buttered several
times and rolled in confectioner's sugar.
For
the holidays Lutz also makes delicious
chocolate tortes, gingerbread houses,
and yule logs.
